With a host of digestive benefits, this curry packs a punch with split red lentils, curry leaves, toasted spices, fresh ginger, fresh garlic and of course, roasted cauliflower. All sitting on a bed of fresh baby spinach. It’s silky smooth, deliciously mild in flavour and perfect for warming nourishment. Topped w/ fresh red chillies and a squeeze of fresh lime. We also recommend serving with a dollop of Greek yoghurt (or vegan alternative).

Ingredients

Cauliflower, ghee, baby spinach, split red lentils, onions, chillies, ginger, curry leaves, crushed tomatoes, lime juice, dried herbs/spices (cumin, turmeric, fenugreek, mustard seeds, garam masala, salt).

Reheating

Defrost and transfer to a covered saucepan, then slowly simmer until piping hot. Or, simply reheat in a microwave.

Serving Suggestions

Serve with your favourite rice, add some papadums or naan and garnish with fresh coriander and chilli.
