Chicken Marbella

Oven-baked free range chicken thigh cutlets (3 per serving), marinated in olive oil & vinegar with Medjool dates, baby capers, fresh bay leaves, fresh oregano and Sicilian green olives, then roasted with fresh herbs and white wine.
Reheating: Preheat oven to 180 degrees, and place foil tray on middle rack with the lid kept on. Heat until piping hot. Best served with potatoes, rice or couscous.
